Chicken braised with leeks, sausage and shitake mushrooms. This is a pretty standard dinner in my house. With two small kids, one-pan braised or roasted dishes are our most accessible good eats. However, I am learning how to broaden my repertoire by creating “building block” provisions, as taught by Purple Kale Kitchenworks. The idea is to be able to make more creative meals more efficiently. That would be awesome… let’s hope I succeed.
This dish turned out pretty well. Think it benefited from the time I spent browning the chicken and the inclusion of sausage (hard to go wrong with pork). Also used home made chicken stock, which is always better than the boxed or canned option.
